An extremely low fat, high protein Buffalo Chicken Sandwich. This recipe involves no oil, and can be made in either an air fryer or in the oven.
This buffalo chicken sandwich uses only low fat ingredients with an emphasis on protein. This recipe also allows for simple gluten free substitutions. Your friends and family will not believe this bad boy wasn't dunked in oil and fried in grease. Perfect for any occasion, and pairs well with air fryer french fries or a side salad.
Ingredients
1/2 cup (12 grams) Organic Corn Flakes (or gluten free if preferred)
1 thin sliced chicken breast (this one was 3.9oz)
Franks Red Hot Sauce
1 egg
1tsp garlic powder
1tsp dill
1tsp chili powder
1/2tsp paprika
1/2tsp pepper
Wheat hamburger bun
Classic Ranch Yogurt (Bolthouse Farms)
Avocado or olive oil spray
Sliced tomato
Lettuce
Directions
Lay out 3 separate bowls
1st bowl mix together your dry seasonings
2nd bowl crack one egg and whisk until yellow
Take corn flakes and put them in a ziplock bag. Crush until there is some powder and some thick pieces. You don’t want complete powder. Put crushed corn flakes into 3rd bowl
Drop your chicken breast into the seasonings bowl and mix until covered
With your left hand, take the seasoned breast and dip it into the egg bath. Completely cover. Hold above the bowl for 5 seconds to allow extra egg to drop off
Drop your egg washed breast into the corn flakes. With your right hand, mix breast into flakes making sure to press down to get them to really stick.
Spray the top of your breaded chicken breast and your air frying basket
Place breast in the air frying basket, sprayed-side up.
Set your air fryer to 400 degrees for 14 minutes (If cooking in the oven, cook at 400 degrees for 14-20 minute)
Halfway through, flip your breast and spray the other side
With 2 minutes left, put your buns in the air fryer facing up. This will make them golden brown
Remove breast and buns. If your chicken doesn’t look crispy or finished, put back in the air fryer at 400 for a few minutes.
Pour your hot sauce of choice into a bowl and toss your chicken breast.
Add breast to your bun, and garnish with lettuce, sliced tomato and a tbsp of classic ranch yogurt dressing.

Feel free to get creative here with seasonings and spices, including your favorite chicken rubs. If you are looking for a low carb recipe, this makes for a great lettuce wrap. If you are gluten free, replace the corn flake breading with Gluten Free bread crumbs or cereal.
