Buffalo Chicken Melt


A low fat version of your favorite buffalo chicken melt sandwich that will compete with any bar and grill.


This buffalo chicken sandwich uses only low fat ingredients, emphasis on protein and extremely simple to make. Feel free to substitute any of these ingredients with similar ingredients of your preference.



 

Ingredients

  • 4.5oz Canned Chicken

  • 1/2 Cup Fat Free Greek Yogurt

  • 2 tbsp Franks Red Hot Sauce

  • 1 tbsp Light Mayo

  • 2 tbsp Reduced Fat Cheddar Cheese

  • 2 slices Wheat Bread

  • 1/2 Serrano Pepper (optional)

  • 1/4 cup Celery (diced)

  • 1/4 cup Roma tomato (diced)

  • 1/2 tsp Garlic Powder

  • 1/2 tsp Dill

  • 1 tsp Minced Onion

  • 1/4 tsp paprika



 

Directions

  • Drain your canned chicken

  • Cook Canned Chicken in a skillet on medium heat until no pink is left

  • Lower heat, add hot sauce, let simmer on low

  • Optional Additional Spice- Dice 1/2 Serrano Pepper- add to skillet

  • Dice tomato and celery- add to a mixing bowl

  • In the mixing bowl, combine and stir in Greek Yogurt, light mayo, all seasonings, celery and tomato

  • Stir in buffalo chicken skillet ingredients into the mixing bowl. All ingredients should now be combined

  • Heat skillet to medium and spray

  • Add your buffalo chicken melt mixture onto your bread slice

  • Add low fat cheese, then close sandwich with your top bread slice.

  • Toast sandwich on skillet, flipping after 3 minutes on medium heat, or until crispy and brown.
